i'm after a veggie burger recipe please

not just with beans/chickpeas but with veggies too please

I've had good luck with this for a bean-hating friend:

  • grind red onion, garlic and a chili together in a food processor until almost smooth
  • fry in a couple of glugs of olive oil
  • add in loads of shredded courgette and sweetcorn (fresh is much better)
  • while this is frying and water evaporating, grind some more sweetcorn in the food processor to make a paste - mix in about 100g cornmeal
  • mix this corn paste together with the veggies from the frying pan
  • mould into burgers and refrigerate if you have time
  • fry until browned, about 5 minutes a side

Alternatively you can just start with a beanburger recipe and add shredded veggies - not so many that the burgers fall apart. Good ones would be carrots, peppers, leeks, courgette, sweetcorn, summer squash.

I make these in a mini food processor.... the quantities below make about 2 good-sized burgers

4oz cooked chickpeas or beans
1oz onion
1/2 carrot, peeled & grated
1 egg, beaten
1 tablespoon rolled oats
chilli flakes, fresh herbs, salt, pepper and other seasoning
-whizz the above together until well-combined then add-
1 tablespoon pumpkin or sunflower seeds

Set aside for about 20 minutes as this allows the mixture to absorb the egg and firm up a little. Shape with wet hands into burgers and fry both sides until golden.
