Good cake decorating cake recipe?

Hi all,

I have used Debbie Brown's madeira cake recipe before but am not 100% convinced that it is all that great in flavour etc.

Does anyone have a good recipe for a flavoursome cake at all please? I am going to make her grey Castle Cake over the weekend and i dont think there's too much carving etc to it as the turrets are made from swiss rolls. I could possibly just knock up a tasty and light victoria sponge for the square bit in the middle...... couldn't i?? Or am i just tempting fate and will end up with a collapsed cake?!!

Sorry for the ramble and thanx for any help!! :o

I agree with you about Debbie Brown's Madeira, it's vile, imo - dry and tasteless.

I do all mine with a basic victoria sponge with an extra oz or 2 of SR flour (depending on size of cake) just to firm it up a bit. Ordinary victoria sponge is a bit too soft to carve well but the extra flour makes a big difference without sacrificing the texture or taste.

this is a recipe for quite a dense sponge, which has low crumb, and quite a creamy taste:

8oz SR flour - sifted
8oz caster sugar
4oz softened butter
2 eggs
6floz evaporated milk
1/2 tspn vanilla essence

whisk all ingredients together until smooth, taking care not to over beat though. cooks in 180deg oven, taking care not to over cook...the edges can get very brown, maybe lose 5-10degs if using fan oven
