any asian cooks out there

I used to go to a toddler group where I was the only english woman; the other mums were all lovely asian women and brilliant cooks! When we had a party and each had to take some food there were some delicious rice dishes. Does anyone have any recipes for cold rice dishes? I'm not keen on anything too spicy though.

My favourite is one that has sweet rice, I think it was yellow coloured, and had sultanas in. Yum! I would so love to know how to make it

Try this

1-1/2 cups of Basmati Rice (uncooked)
A few strands of saffron or 1/8 tsp. of Orange Food Colour
4 Cardamom Pods
1 tbsp. of Vegetable Oil
1-1/2 cups of Sugar
1-1/2 tbsp. of Heavy Cream
1 tbsp. of Raisins
1 tbsp. of Walnuts (chopped)
1 tbsp. of Almonds (chopped)
1 tsp. of Grated Orange Zest

  1. Soak the rice in water for atleast 15 minutes.

  2. Bring a large pot of water to boil with saffron/food colour and half of the cardamom pods. Stir in the rice, reduce heat, cover and simmer until rice is tender, (about 20 minutes).

  3. In a large skillet over low heat, fry the remaining cardamom pods in oil for about 2 minutes. Stir in the cooked, drained rice, and sugar. Cover and cook for another 5 minutes. Remove from heat and stir in the heavy cream, raisins, walnuts, almonds and orange zest.
