Frozen Smoked salmon question - is this OK to eat?

Found a pack of smoked salmon in the freezer this morning - has been in there since xmas! Two questions - firstly, will it still be ok to eat (on the pack it says eat within one month of freezing!), and secondly, it says allow to defrost for a minimum of 12 hours in the fridge, but could we use it if we let it defrost outside the fridge for a couple of hours? Many thanks in advance!

I would eat it. Smoking preserves it so it should be OK.

Hi thanks, but do I have to defrost over 12 hours?

I'd eat it. Provided it's still in it's sealed packet submerege it in a container of cold tap water. It'll be defrosted within an hour.

12 Hours in the fridge gives a slow de-frost which will probably keep the flesh firmer. If you de-frost at room temperature, particularly if you are able to split the pack (any plastic sheeting between the slices?) you shouldn't have a problem. Keep it covered to stop the flies getting to it.

submerge
