I have some scallops for dinner tonight, complete with roes, but I can't think what to serve them with. Any ideas would be much appreciated.

TIA

I love scallops fried in a light sage butter with a saffron risotto.

Pancetta or cubed bacon fried, add scallops and serve on a bed of rocket with a little balsamic dressing or vinegar!

Minted pea puree and crispy pancetta

butter

I second sage butter mmmmmmmmm

I also like to fry some lardons and then cook the scallops in the bacon fat, then after they're ready squeeze some lemon juice into the leftover fat, reduce for a few seconds and pour over the scallops.

I'd second the pancetta and pea purée or salad suggestions. And some really good bread.
Mmmmmm

Pea puree and good fat chips.

Black pudding is a lovely accompaniment to scallops.

But take the coral off and throw it away!

Risotto made with home made fish stock and a green salad.
Light but luxurious.

Jamie oliver's got a great scallop recipe in the 30 minute meals book - it's with five spice and spinach
