For Spanish style chicken - it is baked in the oven with onions and tomatoes and I think the chicken kind of absorbs the juices fron the tomato. Looked simple to make.
Saw it within the last few days - 99% certain it was on mumsnet. I'm not sure whether it was on this thread - the food thread or the file of stored recipies you can browse. The poster did say it was passed to her by a Spanish friend.
It is NOT the one called Spanish chicken which has chorizo in it. Cant find it again and driving me mad...
