Should I try making tofu?

Madhur Jaffrey says it's not worth it as tofu is so cheap, but we have nowhere other than Sainsbos to buy it from and it costs over £2 for a smallish piece. But Madhur does give a recipe. Should I have a go? And where do I buy nigari? Has anyone got home tofu making experience?

Yes you should! It's super easy. I've only made it once but my mother makes it all the time. You don't need to use nigari, though you can buy it at most asian supermarkets and online - you can use lemon juice or cider vinegar. The best thing about making it yourself is you can vary how firm it is - firm tofu is easier to make at home than silken tofu though. Also you don't need to make your own soymilk, you can buy it (though that's not hard to do either).

So can I make it like paneer, just buy soymilk (would be uht) , coagulate and strain? I do want to land up with firm tofu.

Yep, and just keep pressing the water out until it's as firm as you want it.

As far as I can see, tofu is just paneer made with soymilk so the process should be the same.

I made it from the organic beans; so you make the milk before making the tofu anyway it's loads cheaper, obviously time consuming but not too difficult .
