This week's organic box contained a hand-sized helping of ginger. Apart from stir-fries, how can I use it before it shrivels up?

salmon, spread mustard on top and a mixture of grated ginger and crushed garlic, then grill

grate and use in a marinade for a bbq or burgers/koftas with garlic, chilli and cinamon

You can freeze it and grate it as you need it. It will last for months, possibly even a year or so.

It's lovely with coriander leaves in chicken noodle soup.

Juice it with apple and carrots.

Use it in a curry.

Fantastic - thank you! I think I'll freeze most of it (peeled or not peeled?) and try the other suggestions with the rest.

If you freeze it unpeeled the skin will protect it in the freeze, but it is easier to grate unpeeled (I freeze mine wrapped in foil to protect it).
