Vegetarian recipe inspiration please!

Having friends over for dinner tomorrow, meat eaters are having beef in beer served with roast potatoes or mash etc. One friend is vegetarian and I need inspiration for something to give her that will 'go' with the meal.

I have made a vegetable bake with butter beans before and field mushrooms with spinach and brie, but I could do with new ideas as she has had these things more than once!

Does anyone have a good recipe for some kind of veggie stew or bake please?

I prefer veg food to meat and always end up having to cater for both veg and non veg eaters here in Dubai, one really good dish we had on our South Indian holiday was Beetroot cutlets, great with a salad for a whole meal or as a side to meat or fish curries, really easy to make, perhaps wear disp gloves when grating the beetroot but I think you can get grated beetroot in some supermarkets, anyway kids also love it, and really nutritious, here is the link !
