caramelised red onion chutney......?

I've bought it from M&S and Tesco's but feel that I should be able to make it myself! Has anyone got a recipe? Can I store it in jars/does it have to left like ordinary chutney to mature?

This one I make is yummy, but I tend to make it fresh and serve it hot on top of some carrot and chickpea burgers as that was how my Mum made it. It keeps in the fridge for a couple of days - maybe longer?

Chop about 3 or 4 red onions finely. Cook slowly in a pan in a mixture of butter and olive oil. Once it's nice and mushy, add red wine vinegar and soft brown sugar to taste (I think I start with about a tablespoon of each, but keep sloshing it in until it meets with my approval) and keep cooking a bit longer. And that's it!

I'm afraid I'm a bit gung-ho with savoury recipes so can't be more exact but it's really easy.

Thank you Lakota! I was wondering whether I was talking to myself today. I have done the caramelised onion thing before, but my 'jar' from tesco's (fab with cheese!) also has pectin and balsamic vinegar in it, d'you reckon I should just make some normal stuff, stick it in a sterilised jar and see what it's like in a month or so?

I reckon it's worth a shot, the pectin will be so it sets better I guess, so maybe leave a bit more liquid so it sets around the chunky bits? Sugar and vinegar are both preservatives I suppose, so hopefully it won't go mouldy. Maybe leave out the butter part and just cook in oil to be on the safe side? I reckon you'll need tons of onions to make jar loads though...

Mmm, quite fancy some myself now!

Tesco's sell Value ones so I could use those or if I can face it I'll go to the market and buy a sackload - might need some goggles on to peel them though!

mmmm might just do a couple of jars for now!
