Not one to boast but I make the best chips ever since watching HB.
Seems like a faff but because its done in stages its not.
Peel and chip potatoes.I use Maris Piper or King Edward .
Soak in cold water-gets the starch out.
Par boil,to pre-cook. Drain and dry.Heston puts his in the fridge, dry,cold.
First deep fry to cook but not colour.
Second ,quick deep fry to crisp. Sea salt and vinegar( ketchup for DS)
I always filter my oil back into the bottle.Stops the crispy bits burning.
Might have to marry Heston.
