Truffles in time for Xmas

Need a recipe for this too please. God I must be on a baking mission as I have about 4 posts in this section at the mo.

Italian Truffles

2oz chocolate
1tbsp butter
1tbsp icing sugar
1 tbsp grated chocolate
1 tbsp rum (optional)

1)Melt choc in a bowl set over a saucepan of hot water. (Add rum at this point if using)

2)Add butter until melted and then icing sugar.

3. Leave mixture until cool and firm enough to roll in to balls and then in the grated choc.

i make them by melting dark chocolate with cream, let it cool and harden up a bit, roll it into balls, roll it in chocolate shavings or cocoa powder and refrigerate.

That's like the ones in delia's christmas book that I'm planning to do, LilacBump. Apparently you can make them in advance and freeze them. Have you ever tried that?

i've used that recipe since i was 9 when we made them in school. i haven't tried freezing them. they never last that long

ill have to lock DP out of the house for the day as hes mad on truffles
