Carrot and Walnut Cake

Remember a friend of mines mum making this when we were young and would love to try it myself.

Only thing is I don't know how. Like the one with butter icing(I think) on top

Any ideas folks?

i remembered the Banana and walnut loaf that i made in school... sadly i didnt get the chance to have a bite as mum had ate it all as she is mad on walnuts!! - i wasnt pleased!!

I use this recipe, and it's always gone over well.

It's normally iced with cream cheese icing, and is quite an American cake - might not be what you're after?
