Cake that will keep/travel well- in July?

Not that I want much or anything...

SIL's wedding is in July and they have asked guests to bring cake for the evening reception. We live 300miles away and the wedding is on the Saturday, we are driving down on the Friday so will need to make the cake on the Thursday.

Any tips for one that will stay moist (nothing worse than a dry crumbly cake IMO) but keep ok in the car/hotel?

Any tried and tested recipes with ground almonds in rather than flour would be an absolute bonus but not holding my breath on that one!

I like these they keep really well. but dunno if it would work with almonds instead of flour.

I'm sure Keith Floyd does an orange and almond cake which would keep well I should imagine. It's pretty moreish so I dont have it about for long.

What about one that needs extra time for keeping. I'm thinking of parkin or gingerbread where the taste develops over a week or so.

Nigella's damp lemon and almond cake. You are supposed to make it a few days before eating, it gets moister the longer you keep it. I made it last Friday, we ate some Sunday and it was very moist yesterday still, 4-5 days on.

Thanks all! Sooz that torte looks absolutely gorgeous, not sure my baking skills are up to something so professional though! I really like the sound of the orange/clementine/lemon and almond cakes so will be doing some trial runs over the next few weeks. Yum!
