Butternut Squash soup to impress.

I have some guests arriving after 9 tonight who'll want something light to eat. I've got a butternut squash at home and a posh bread mix for the breadmaker and wondered if anyone had a good butternut squash soup recipe please? Thanks.

I've got two really easy ones - not sure if they're posh enough?

  1. Roast squash and 6 garlic cloves. Puree with chicken/veg stock. You could also add cubes of gruyere a la Delia.

  2. Cook squash with onion and chilli in coconut milk. Puree.

Both v. easy and v. tasty!

Would agree with recipe no 2. Dead easy & quick but so tasty nobody would believe it took you 15 mins to make!

Just a quick q BBS - For a whole butternut squash is one can of coconut milk ok?
And how much onion would you use? do you fry first?

I do fry onion gently first, but don't let it colour. I tend to do industrial quantities, but yes, I think that would probably be right. It also depends on how sloppy you like your soup. How many are you feeding?

Should be OK then! I usually use 2 squashes at a time, but then we're a greedy family, and I like it to last for a few meals.

damn-just finished making squash chowder (waitrose recipe) and rather disappointed-bland & overly sweet. nxt time I'll try chili/onion combo
