Eggless cake

I want to make a surprise birthday cake for an egg-allergic friend.

Does anyone have a good recipe? Also, how well do egg-free cakes keep?

I've used this recipe before for cupcakes for DDs class - one of her friends has an egg allergy & never gets to join in so I did them all egg free

I swapped the cinnamon for vanilla essence & found the oven needed to be slightly higher _ fill the tin/case a bit more than you usually would - but it worked well - no one noticed they were any different to normal cupcakes :)

& sorry can't say how long they keep - they were wolfed down the next day, but I would imagine pretty much the same as a normal cake - possibly slightly longer as the vinegar might help them keep

A friend used to make a vegan chocolate cake for my egg allergic ds (he has outgrown that allergy now, luckily)

It used to keep really well and was wonderfully moist because of all the vegetable oil in it.

I think 'video jug' used to have a recipe that was very similar.
