left over roast potatoes...

does anybody know how I could use these rather than throw them out?

I am usually good with leftovers but struggle with roasties.

you can reheat them and they go lovely and crispy, I often put them in stew, although its not really stew weather at the moment.

Chop up make Spanish omelette/tortilla with eggs, cheese, onion and whatever veg you want to thrown in.

Leave them in the fridge and scarf one whenever you (or DH, or DCs) feel peckish.

Lol at the 'it's not possible' I cooked for 5 but there were only 4 of us today. I have to admit I ate as many as I could, but got to the rare state of being so stuffed I couldn't eat another mouthful!!

Delicious cold.

Dd loves them warmed up for breakfast - dp always tries to make extra for her.

Freeze and reheat.

Slice into ½cm slices and sauté in a little butter, sprinkle of rosemary and some Maldon salt.

Or Bubble and Squeak, with some leeks, onions/spring onions, some crispy lardons and mushrooms. Top with a fried or poached egg. Rather tasty.
