Having greek lamb koftas with greek salad + crusty bread. What dessert? But it can't be cheesecake which is my default; and fruit salad, following such a light main might be too worthy!

Must be make-able in a couple of hours, ie not require standing overnight or chilling for hours!

Dinner is tonight for me and 2 of my female friends so they won't need 'impressive', just nice!

My go-to dessert is chocolate mousse. Per person you need 1oz melted good quality dark chocolate allowed to cool a little, 1 egg separated & a little liqueur. In a very clean large bowl, whisk the egg whites to soft-peak stage. Stir the chocolate into the egg yolk and liqueur. Quickly fold the egg whites and choc/yolk/liqueur mix together. Pour into ramekin dishes and chill until required. They set in under an hour

Can be jazzed up with strawberry halves, whipped cream, toasted almond flakes etc. etc. etc.

My default dessert is a Nigella one: Use ready made puff pastry, roll out onto baking tray (line with baking paper first), and score a line (don't go through the pastry) about 2cm from edge around it. Then slice peeled apples into very thin slices and lay in neat lines down the length of the tray, inside the scored area. Can casually scatter redcurrants (or similar) on for a splash of colour. Melt about 100g of butter, about same of brown sugar until runny (don't let it go thick or it stays as thick blobs) and pour artfully over apples. Brush some melted butter over edges and pop in oven at 200C for 20 minutes until golden. Serve with cream, whipped or poured, sweetened with a little sugar. AND it's one of your required fruit portions for the day. It's good for you!

oops bit over generous with the butter & sugar syrup - double checked and it should be 1tbsp of butter and 1tbsp of sugar. But then - who cares if you have too much syrup......?
