ideas needed....leftover chicken

I have all the brown meat from yesterday's roast and don't know what to do for tea.

I also have (amongst other stuff!)
couscous
rice (basmati and rissotto)
pasta
passata / tomatoes
salad stuff
potatoes
bacon
loads of herbs/spices
Camembert
butter

and I can go shop!

help!!!!!!

For supper tonight we're having yesterday's left over couscous (as usual I cooked far too much food!) which I made with roasted veg - courgettes, onion, cherry toms, whole unpeeled garlic cloves (squidged the yum out once roasted), basil and some oregano. I'd just make that and chop the chicken in.

Or: make a little Coronation Chicken to have with jacket potatoes and salad.

Or: Caesar Salad and just fling the chicken in a pan with splash of olive oil to warm through and serve on top.

Or: make a carbonara with bacon and chicken and some of the camembert instead of parmesan

Or: special fried rice

Or: chicken/bacon/mushroom risotto

I could keep going. Can do a thousand things and a thousand more with leftovers!

I would go & get a tine of Batchelors (used to be Cempbells) condensed chicken soup.
Slice & fry bacon & onions in a little oil. Add the chicken & heat it through. Add the full tin of soup & enough water to turn it into a thickish sauce. You can also add peas/sweetcorn/mushrooms. Sprinkle on some chopped mixed herbs.
It's really nice with pasta, rice or jacket potatoes.

Loving the pasta sauce idea! Might even have a tin in the cupboard (why did I not think of this?????)

I'd make any of Rockstock's ideas and also consider:

  • curry (with all your spices)
  • chinese noodle soup with a rich chicken and soy broth and chinese greens
  • chicken vegetable soup with rice
  • mexican style enchiladas or burritos/tacos - particularly fun as you can put out all the fillings and kids can build their own
