I have some asparagus in my veg box this week. Does anybody have any ideas or recipes for cooking it please ?
The only recipe I can find is making a quiche.
Any other ideas welcome.

My favorite way of eating it is to boil for 5 mins then serve it with melted butter - yum.

Lightly steamed asparagus, big handful of grated parmesan, fried or poached or soft-boiled egg on top

Steam and then make a hollandaise - dip each spear in the hollandaise and eat one by one (especially fun with another person Wink)

Cut it into short lengths and mix it into a hash with cubed potatoes and bacon - top with a poached egg or grilled salmon or rounds of goat's cheese or whatever you've got on hand

Lightly steam it, then wrap each one in a slice of parma ham/pancetta/san daniel etc and griddle for a few minutes on each size. Dress with a v. good olive oil and splash of balsamic.

Break the ends of and use them with an onion, a potato and some veg stock to make soup; serve with the lightly steamed heads whole.

My favourite is to dip the spears into sift boiled egg like soldiers

I make an asparagus and prawn risotto. it's a Tana Ramsey one and is really easy.

I second lightly steamed asparagus with a fried (or softly boiled) egg.

If you have thin asparagus, put them in an oven tray with olive oil and lots of rock salt. Put them in the oven (gas mark 5 I think) for 15 mins.

When they are nicely roasted, spread lots of parmesan shavings (whch will slightly melt) and eat with the meat of your choice.
