I've managed to loose my recipe for falafel, do you have a good one I can use?

I make them differently every time i make them and they ALWAYS fall to piece but taste delicious..any tips on getting them to stick together ?

My 'recipe' is a tin of beans a tin of chickpeas smashed up with my hands with coriander, loads of cumin, fresh chillies, garlic and onion and mix them together with a couple of beaten eggs and then fry.

They vary a lot.. coriander/spring onion/amount of chilli/ breadcrumbs/ sometimes I roll them in sesame seeds or pine nuts.

Yummy, I love Falafel.

howto I made those falafel last night, and warmed them up in the oven for lunch & they were yummy! Thank-you!

worzel I'm not sure why yours keep falling apart, I would have thought the egg would help them stick together? The ones I made didn't fall apart at all, but I did blitz them in the blender, perhaps your chickpeas need more mashing?

worzel it's because you're using cooked chickpeas, you should use dried ones, soaked for 24 hours but not cooked.

But I used tinned chickpeas in the recipe howto linked to & they stuck together?

btw, on a similarish vein, I made some black bean croquettes yesterday (DD1 won't eat beans in a salad, so I'm looking for other ways to present them!) and they were yummy!

bessie I've never managed to get mind to stick together when I used tinned, when I fry them they just disintegrate. When I use uncooked ones, I do everything else the same and they stick.

yum been having cravings for falafel for a couple of days, no am not pregnant just breastfeeding and hungry so thanks for this thread!

Does anyone have any good recipies for sauces to go in with the falafel in pittas? I used to work in the Middle East and they always had sauces to add, one contained tahini but not sure what else.

I know! As they fry the fat bubbles off the mixture until I'm left with a grain of chickpea and a speck of coriander!! Most frustrating and makes a real mess of the oil too!

crazy tahini is yummy, but i don't know any sauce to make with it. We just have minty yogurt (just plain yogurt plus loads of dried mint - needs to be made at least 10mins in advance so the dried mint isn't so dry)

I'm bf too - do you worry about eating too many chickpeas/beans? DD2 seemed to be more windy last night & I'm a bit worried it was down to the black bean croquettes I had at lunchtime! Hopefully tonight's tofu burgers won't have a similar effect?!

bessie - thanks will try the minty yogurt number, sounds yummy, got some mint rampaging in the garden so will be handy to use some of that too.

Not sure I can blame my and DS2s wind on chickpeas/beans as been having very little recently, hence the cravings I think, yet the wind continues! Sorry to digress and give far too much information. Anyway fennel tea meant to help with digestion and with milk production, can give to baby as well, not tried that yet though but just had a cup myself so will see what effects are.

Love the blog, have bookmarked as saw lots of good recipies we could use.

Are soaked but uncooked chickpeas okay for babies? Doing baby led weaning with 6 month old, could being uncooked give them problems digesting, always cooked mine so just wondering.

Oooh, good point crazy aren't you supposed to soak & cook dried beans well before eating? I always use tinned as I'm lazy!

I read in a YAWYE book that adding some seaweed to beans while they cook (removing it before eating) will get rid of the gas-giving properties, but I've never tried it!

Glad you like the blog, I got fed up with my collection of recipes torn out of magazines & thought i'd try something a little more high tech! Grin

Like a bit of seaweed so will give that a try someday, keep getting DS1 to try the seaweed when we once in a blue moon get a chinese but he looks at it with deep suspicion. Anyway that's me signing off for tonight, more bf calls.

Definitely make them with soaked, uncooked chickpeas - gives the best texture I think.

I really like this variation on falafel - sweet potato falafel. A bit healthier than normal ones because they're done in the oven rather than fried, really nice flavour and texture though.
