My DS's nursery have asked us to start giving different packed lunches now that its warmer and gave us suggestions including a salad box with rice a veg etc. My DS loved the idea of this but im not sure what the rules are with rice?

I was planning on using the express rice which you cook in the microwave and then cooling an putting in the fridge for the next day? Is this ok or not.

Plus it will be in his lunchbox from 3 hours before he eats it, his lunchbox has a silver insulated inside but not sure if it is actually a cool bag?

Thanks x

I would. I know one isn't meant to reheat rice for some reason (however I do, always!), but rice salad will be fine. Maybe pop in a couple of frozen frubes or something, which will keep the temp down a little longer and also give him a cold yog for his pud! Whenever I travel (once a month) I usually take a rice or pasta salad for DD3 (she's 2).

Thanks Rockstock, I didnt think of the whole rice salad thing. Ive brought ones from shops thinking about it and always been fine. Might invest in a cool block tomorrow. x

the issue with rice is leaving at room temperature for any length of time - it has bacteria that will grow and can cause food poisoning. Cooked rice should be cooled quickly, put in the fridge and used withing 24 hours.
