Help me - Baking 5 day life

Hi,
I bake a lot of brownies as they keep for a good few days and get better with age if anything!
Can you suggest anything else that also has a decent life, 5 days minimum really, preferably that can be in individual portions.

Seed cake
Shortbread bars with fruit crumble on top (like these) keep wonderfully in the fridge

Lots of baked goods, particularly softer things like chewy choc chip cookies, keep for an extra few days if you keep them in an airtight container and stick a fresh slice of bread in the tin with them. The bread goes stale and the cookies stay soft. I'm told you can change the bread after a couple of days and extend the life of the cookies even further, but I have never been able to make cookies last this long Blush

i make muffins and stick them in the freezer. Just take a couple out a couple of hours before you need them. It works really well for lunch boxes or picnics because it helps keep the other stuff fresh too.
