Roast parsnips

How do you do yours. I'm not happy with mine! I've tried parboiling, not parboiling, hot oil, hot goosefat, 30 minutes, 40 minutes.

Anyone so wonderful ones and if so how?

Cut into quarters, parboil 3 - 5 minutes and roast in a hot oven (gas 6, 200 deg) for about 30 - 40 minutes. I loathe parsnips so I can't say that they taste good, but OH and MIL like the way I do them. I just use veg oil as I find goose fat makes little difference to the taste of roast potatoes.

par boil for 5 mins, drain and pat dry then brush with melted butter - roast in same tin as potatoes, for about 30 mins, shorter time than spuds.

i find they are better with less fat rather than more IYGWIM

I don't parboil them - but I have discovered that the secret is to roast them in a mixture of oil and butter. The butter really makes all the difference.

I also think they roast better at a slightly lower temperature than roast potatoes, which isn't always easy to do - but cooked for longer, so allowing them to caramelise and crisp up a little, without burning.

I parboil, then roast in olive oil and about half way through I scatter on grated parmesan and black pepper. Lovely.
