Failsafe sponge cake recipe for DD's first birthday

Anyone have any failsafe recipes for me?

I'm afraid I can't do links on my phone but try googling Delia's all-in-one sponge recipe. I used it for DS's first birthday and even though I was using a rented '1' cake tin, it was a real winner! Very simple, easy and yummy!

6oz self raising flour
6oz sugar
6oz butter
3 eggs
splash of milk

mix it all up. that makes enough for 2 round 8inch tins that you can sandwich together

Im not planing a round cake but making my one number 1 shaped cake from 2 loaf tins. 4.5 by 12 inches.. would these amounts be ok for these tins do you think?

hey pigley, I too am making a 1 cake just shortly, I have cheated a bit and have ordered a personalised cake topper so I just need to make the sponges, my icing is still all over the place.

mine is
150g SR flour
150g caster sugar
3 eggs
150g margarine (I have found it better than butter for the actual sponge bit)
teaspoon of vanilla essence

cream marg and butter together first, then eggs, then sieved flour bit by bit, splash of vanilla essence job done.

I'm not sure on that one but would highly recommend hiring a tin - only a few quid from most cake shops. It was super easy, honest!! I covered it with butter icing and smarties - it looked and tasted rather good, if I do say so myself!

Oh, and the lady in the shop told me how much mixture I'd need - i.e. Enough for a 9" round tin or whatever it was!!

HRH- I did think about it but I did one like this for DD1 that turned out ok so im ok doing that bit, just can't for the life of me remember what recipe I used for the cake. (photo on my profile)

SK- Can you believe they are one!?!
