I'm going to marinade some chicken bits, how does this sound?

They're to be bunged in the oven tomorrow afternoon but I have a busy day so thought I'd start them off tonight. Just drumsticks. Was going to shove some honey, soy sauce, chopped garlic and a sprinkle of ground ginger in a bowl and leave them in it - will this work? I've never tried anything like this before.

Yes. Mix it up well before you put them in and turn occasionally when in there.
Thighs better than drumsticks really but drumsticks fine. Take off the skin and score the flesh slightly with a knife to let marinade permeate.

That should work - I'd add some sesame oil as well, if you have any, and use fresh grated ginger instead of ground as it has more zing.

I have only got ground ginger and my oil selection is either olive, sunflower or sesame. Or Bio but I don't think that would go Grin

I'm thinking sunflower's probably the best option. And thanks for mentioning skin, hadn't thought that far ahead but would usually get rid for casseroles and stuff.
