Right, so I've got this coconut...

What the heck do I do with it now?

DH drilled a hole in it so DD1 could drink the milk. No-one liked it. I've drained it out and frozen it for future inspiration. (anyone???)

Then cracked it open and I'm the only one who likes the meat but I'm not going to eat a whole coconut! It's in the fridge now.

Any suggestions?? Pretty please? We none of us much like hot curries.

I'd grate or chop the meat to make it easier to use. I would think you could get some coconut cream or milk, or supplement with dessicated coconut, if it doesn't yield enough to actually cook with.

Off the top of my head (and avoiding all hot curries!) maybe:

macaroons
mix into a crumble topping
mix into oatmeal cookies
make your own muesli with coconut
coconut pannacotta
coconut ice cream (if you've got an ice cream maker)
mix it in with rice when you make biriyani
coconut cake (interesting looking American cake using boxed cake mix here)
cupcakes (lychee coconut cupcake recipe here)

Bin-bag? Seriously, the milk is OK but to get the flesh away from the brown inner skin will relieve you of your best chisel and all your fingernails. Not worth it. Alternatively, chop in half, suspend with a string from a bird-table and watch the blue-tits giving themselves concussion trying to eat it.

In the country I grew up in, they had little stools with graters attached so you could grate your coconut then squeeze the flesh through cheesecloth. What comeso ut is coconut cream. Great in curries.

Very hard to do without right tools though. You could chip off flesh and food process.

coconut is the devils food unless its in a curry.

there's a reason it is the food people eat to survive on desert islands, probably because there is nothing else to eat.

Thanks for ideas- I'll try attacking it with a grater and see how we go on. Otherwise it'll be chil's excellent suggestion. Grin
