Yummy salad ideas please!!

We've been invited to a bbq on royal wedding day and the hosts are providing meat. They've asked guests to bring salad or pudding. I fancy bringing a really nice salad, but this has never been my area of experties! Any suggestions please?

Fatoush (pitta bread salad) is gorgeous, if you can get hold of some summac (Waitrose or Middle Eastern shops). Or tabbouleh.

A simple green salad is always welcome but you can make a bit more exciting - torn up little gem/butter lettuce, thinly sliced salad onions, pine nuts or broken-up walnuts, crumbled feta cheese, cubed avocado, some torn-up herbs (eg. mint, tarragon or dill) with a dressing of olive oil, mustard and vinegar and a pinch of sea salt

Could do warm grilled courgette slices mixed with torn up fresh mozzarella and mint, drizzled with some very good olive oil and sprinkle of sea salt

Roasted carrots cut into coins mixed with warm white or butter beans, with a dressing of olive oil, lemon juice, very thinly sliced shallots and a big handful of minced dill

I did a Moroccan tomato and herb salad the other day. Faff but lovely.

Have been run off my feet over the past few days with pre school royal wedding fundraiser etc! In the end I went for blueberry muffins in Union Jack cupcake holders! Blush

But thanks so much for the input. It has inspired me to host a bbq in a few weeks time and do lots of yummy salads. Have googled fattoush and it looks really good. I sort of forgot about halloumi. Only eat it in the summer! I can imagine it goes well with grapes.
