smoked salmon

I bought too much smoked salmon (it was on offer) and I have no idea what to do with it all. Had enough sandwiches, and would normally freeze it but already have a pack in the freezer.

Any suggestions?

Make a simple pea and leek risotto, then serve with the smoked salmon sprinkled on top.

Or on toast with scrambled eggs.

Or beat up with some cream cheese and dill for a quick pate.

Or a simple pasta sauce with creme fraiche and broccoli, then the smoked salmon at the end.

(Can you tell we like smoked salmon!)

On toast with poached egg

On q bagel with cherry tomatoes and spread cheese

Lay it all out on baking foil add some butter cover and bake in the oven for 15 mins, serve with salad or potatoes and veg

Baked potato with cottage cheese chives salmon on top.

Thanks for all the suggestions. Had it with eggs for breakfast this morning, but I'm not normally a big egg eater so don't think I'll do anything else egg related.

Will probably try one of the risotto/pasta suggestions for a quick week night dinner this week.

Any more ideas welcome. Lots to use up!

Carbonara with the salmon and some chopped spring onions is nice.

A paté.

Smoked salmon tartare with capers/cornichons, chives whatever really

Smoked Salmon blinis

This is very tasty too.

We have it in pasta -

cook & drain your pasta (quills, shells, twists or even taglatelle are fine)

use same pan Wink -

start to cook through your smoked salmon in a glug of olive oil

add broccolli cut into small trees - stir fry these together until salmon is browning & broccoli wilting

add large glass of white wine (more if lager quantity)

Half tub of creme frais (more if needed)

Passata & a good squirt of tomato puree to thicken

stirring it all together

add pasta back to the pan, season with black pepper & stir through until all pasta covered with sauce

serve with parmesan

This is a favourite with everyone, including DD & pretty healthy too :)

Whoops - just realised someone else beat me to that one - & heres me thinking it was my own recipe - lol

Another suggestion would be as a broth - we don't eat meat but grew up with traditional Geordie bacon broth - Smoked salmon is a good replacement for the bacon & we all love this too

so ...

Smoked salmon - browned off in the base of large stew pan & add....

Carrots roughly chopped into large chunks

Leeks again roughly chopped into chunks

Turnip (the yellow fleshed one, that is swede to some) large chunks roughly chopped

Potatoes - chopped

couple of handfuls of yellow lentils

Handful of dry - or tin of Butter beans

cover completely with water & a bit more - & bring to boil & simmer

Season to your taste - its cooked when the lentils have gone to mush & butter beans cooked through

bring back to boil & add dumplings to the top just before its ready - cover - & serve when dumplings are cooked :) - this freezes well too

I'd eat it out of the fridge tbh, while telling our smoked salmon loving maine coon to keep quiet and not give the game away.

I love it in spread with a mix of soft cheese and v v strong horseradish sauce and then rolled up.
