Ground almonds - uses...suggestions please!

I've got a small bag of ground almonds to use up, and I'd appreciate some suggestions as to things I could do with them / recipes, please.

Tricky thing is that I am on a diet, so I'm not doing any baking of cakes or making of creamy korma-type curries.

What healthy things could I do with them? Tried adding some to my porridge, but it made the texture a bit yuck.

Try the onion bhaji recipe from the Pig2Twig diet recipe book. It's gorgeous. Not sure how to link but am sure you'd find it on their website

i make a thing that we call 'indian pudding' in our house, but i have no idea what it really is. A friend whose husband is indian taught me to make it.

One cup semolina in a pan, heat for a minute or so, bash seeds from 4 or 5 cardamom pods and mix in, add half cup ground almonds and and inch of butter (forget the diet), mix and heat until texture of breadcrumbs... chuck in a handful of sultans, cover with boiling water (careful as it will bubble like a volcano) and stir until thickened. Add sugar or honey to taste. I prefer it left to cool then eaten almost cold - it becomes really thick and is delicious. My 4yo DS likes it for breakfast.

I wouldn't worry about using them up - seal the bag well and they keep - I've just finished a bag that was best before Jul 09!
