Vegetarian scotch eggs?

I've seen a few recipes for egg and then a breadcrumb and herb mix but is there anything like sausage meat that I could use for outside the egg and then use the breadcrumb mix? Any nice recipes?

Do Holland and Barrat still sell Sozmix? I used to mix it with v finely chopped onion and mushrooms to make sausage rolls so I guess it could work for Scotch eggs too. Or maybe use a nutloaf mix?

That looks nice apart from the chickpeas, I'm a fussy bugger hehe. I've never hear of Sozmix but I'll definitely have a look next time, thank you :)

You should be able to substitute haricot or cannelini beans for the chickpeas, I bet.

Sosmix is now branded "Granose". It is just like the old sosmix and I get ours in our local health food shop. Enjoy.

Aren't they savoury eggs though? They're not the scotch eggs with the whole egg in the middle

I don't like the quorn ones, although my dds do.

H&B do ready made ones which are quite nice - but I thought you wanted to make your own.

I would like to make my own yes :) Although I'm not against buying some! I'll have to take a trip to H&B as it seems I'm missing out on a lot!

If you are going to H&B, buy yourself some carob coated hemp seed bar things - they are bloomin' gorgeous. And their Bakewell tart flavoured flapjack is pretty good too! :)

Sage and onion stuffing would probably work really well, I love that stuff, at this rate I'll have about 20 scotch eggs in the fridge hehe :o

Lentils go really well with boiled eggs, so I wonder if cooking some red lentils, then mixing with cheese and maybe some lightly cooked leeks or something might work? Would probably need some egg to bind it too.

Could just eat a seedy thing now!

I make a nut roast and use that to coat the eggs, its really lovely. Sometimes the nut coating splits when its cooking but if you keep an eye on them they won't. They only need minimal frying or oven baking to make them crisp. Ohhh, I really want some now!
