Greek Roast Lamb

As a sort of summery roast. It's for Sunday and the forecast is warm again.

Thinking some sort of roasted veg? Aubergine? Feta?

Nigella has a recipe for roasted veg with halloumi in Nigella Bites, which is red potatos, sweet potato, red onion and peppers if I remember rightly, roasted in olive oil with seasoning and then some chucks of halloumi melted over at the end. I make it with feta sometimes and I bet some aubergine would be lovely!

Too rich to have cheese and lamb I think- I would do roast veg - new potatoes, corgette, peppers, aubergine, whole cloves of garlic and shallots (leave skin on) or onions (cut in wedges leaving the end on so the wedges stay intact, some lemons - tray bake with olive oil rosemary, thyme etc...spread them out on the trays so they don't boil.

And then, it's not Greek but Panzanella (Italian salad with bread in) ... Maybe there is a Greek way with this too, I think it goes nice with roast anything in summer.

Maybe some green/brown lentils?

couscous with roasted veg. Not hot but warm with a balsamic dressing. And a green salad.

There was a really nice moroccan salad in last months good food. I served it last week with lamb and it was delish.
Feta, tomatos, lemon, red onion and herbs
Can post it if you like the sound.

What are you doing for pud?

I would do a cucumber mousse with some strips of smoked salmon lining the mould at intervals (I do it in a ring mould) or a chilled soup (cucumber and lettuce with chives, roasted tomato with basil). Or a light smoked mackerel paté with some homemade melba toasts???

Like the pate idea. It needs to be something simple and easy as I am pregnant and due to drop with two other little ones!

The paté is v easy to make, as is the melba toast. Blender or no blender, all you need are three ingredients!

How kind of you to make white chocolate mousse for the DC and which you will no doubt 'have' to taste test!!!!!
