This one's adapted from Delia

Ingredients
900g white fish fillets, cooked and chopped into chunks
1 large mango, peeled and chopped into chunks
2 x 400ml can coconut milk

For the curry paste
2 red chillies, halved and deseeded
1 lime, grated zest and juice
2 stems Lemon grass, roughly chopped
2.5 cm ginger root, peeled and sliced
4 garlic cloves, peeled
1 small onion, peeled and quartered
1 tsp shrimp paste
3 tbsp Thai Fish Sauce

Method

  1. Put the coconut milk into the pan and bring to the boil, stirring all the time, then reduce the heat and cook until the fat separates away (about 20 minutes).

  2. Put all the curry paste ingredients into a processor and blitz into a coarse paste.

  3. Add the paste and cooked fish to the pan and simmer over a medium heat for 5 minutes Add the mango and cook for another couple of minutes.

I don't eat fish so I haven't tasted the recipe but dh likes it.

The mango is a pain to prepare so I usually cheat and buy a pack of prepared mango to use instead.

I should think you could leave the mango out if you don't fancy it.

Malaysian fish-head curry whole fish heads, eyes n all. Tastes wonderful if you ignore the eyes.
