Alot of threads about cutting down on how much we spend seem to end up with people comparing how many meals they can get out of a chicken.

I wondered if we could have a thread to share leftover chicken recipes and inspiration...

ill start

i do or have done...
chicken and pesto pasta bake
chicken curry
chicken leek and bacon pie

I'm in Smile.
Full roast - meal 1
Cold chicken and SW chips - meal 2
Chicken and mushroom pie - meals 3 & 4
Baked chicken risotto - meal 5
For the risotto I altered this recipe to suit the ingredients I had in the fridge/cupboard.
That's my usual set of recipes, but I also have been known to make chicken and bacon pasta bake too Smile.
Next in line.....Grin

roast dinner
next day bubble and squeak with left over veg,spuds. Eat with cold chicken and leftover gravy.
egg fried rice with whatever veg, peppers, peas, chopped chicken, leftover ham or whatever is in fridge.
pasta, tomato sauce, olives, anchovy, chicken, chili.
chicken and ham pie.
also make stock from bones and big pan of soup with lasts few days.

chicken & pasta & pesto (bulked out with veg)

egg fried rice using left over chicken/veg is a good one, will use that Grin

DD (3) is dairy/soya intolerant so any new meal ideas for her are fab Smile

fergoose - how do you do the egg fried rice? it never tastes 'right' when i do it?

I fry an onion, put in some chinese five spice (prob about a teaspoon), bit of fresh or jarred ginger, garlic if you like. Then add chopped chicken, ham, peppers, whatever you like. Then couple beaten eggs, make an omelette in pan, then chuck in cooled boiled rice and some frozen peas. Stir and add light soy sauce.

I love this recipe for egg-fried rice - I make it with lots of chilli and ginger in the dressing but I think the basic method works well as it stands.
