Can anyone recommend a nice easy curry from Madhur Jaffrey's 'Curry Easy'?

Hi there

DH presented me with this last night. A rather unsubtle dig that I need to cook more curries, perhaps? Hmm

I know the title maintains all the recipes are easy, but can anyone recommend a good recipe that requires minimum effort (and washing up). I'm very much a 'bung it in the oven' kind of cook.

Well, as nobody had replied to my thread Sad I made the baked beef curry and it was a complete disaster.

Yoghurt curdled, and then the whole thing dried out and I had to cook it for way longer than the recipe specified in order for the meat to be done.

I followed the recipe to the letter so feel very disappointed. Don't these recipes get tested?
