Can I cook rice in coconut milk?

I have made a red thai curry for dinner and have some jasmine rice to go with but have some left over coconut milk and though I would maybe have a go at making coconut rice. We normally get this from our local thai takeaway and it's yummy but not sure how to make it?

do you mean savoury or sweet? Rice pudding made with coconut milk is gorgeous

savory rice cooked in coconut milk and mixed with black beans or kidney beans is one of my favourite dishes and is very popular in the caribbean side of Costa Rica.

Yep - it's lovely; makes nice sticky coconut rice. I've done it before with a thai curry and it tasted great.

I just cooked the rice as usual, but substituted as much of the water for coconut milk as I could without letting it boil dry - you have to do a fair bit of stirring to keep it from sticking, but it's worth it.
