how many meals using eggs can i get away with in a week?

we are getting five a day from the hens at the moment and I'm struggling to use 10 a week. Can anyone give me some egg based meal ideas? And as a side issue, is it healthy to eat that many eggs (which would amount to an egg every day for each of us with some left over!)

lemon meringue pie uses quite a few eggs.

Also, I second the curry idea. I generally put a hard boiled egg for each person in a chickpea, spinach and potato curry. Yum.

Sure this has already been mentioned but you can separate eggs and freeze the yolks and whites separately - I've used ice cube trays or the smallest disposable plastic containers from the supermarket.

Just remember to write on the outside how many egg yolks/whites are in each! 2-3 per container seems to work best for us.

Definitely sell them - I buy eggs from my dog sitter and they're so delicious I'd never get them from a supermarket again, except in emergencies. She also feeds any spares to her dogs, and they have amazing coats.

I've been getting big bunches of fresh asparagus from local farmers market, and eating poached eggs with asparagus spears to dip in. Yum. (And even yummier for being a seasonal treat.)

Thanks everyone. There are some really great ideas here and I might sell the eggs at the gate. A pound a box would very quickly offset the cost of the chicken feed!
