Shaoxing Rice Wine crisis

Frog253 · 17/04/2011 21:11

Waitrose has been out of stock of their rice wine for a while now and I am running low at home. Tesco doesn't seem to stock the equivalent. So does anyone know of a suitable alternative? I use it to make a sauce for a stir fry, mixing it with soy sauce, honey and cornflour.

Dry sherry is a perfect alternative. (Fino)

I remember the sherry suggestion (when I couldn't buy it before) and I did try with an Amontillado which probably explains why I didn't think that it worked that well. Will try a Fino.

I always use amontillado and it seems to do trick.

Could also try sake though it has a far more subtle taste

Tescos own Fino which is about a fiver for a huge bottle is perfect and keeps for years!

Amontillado is a bit too sweet as a direct alternative to rice wine, but also great with some chinese cooking and stir fry sauces. Depends on what your mazking really.

Thanks for the tip about Tesco's own, will try that.
