Title says it all, next door neighbours have very kindly given me a carrier bag full of rhubarb. Dd made a raspberry & rhubarb strudel tart which was very nice...just looking for some inspiration.

Definitely a pudding- it can be sort of sloppy underneath and IMO is better that way. With cream/ice cream-yes. Hth.

Rhubarb and ginger jam is so lovely.

I stew mine using orange juice and honey (so no sugar) then pop it in the fridge. I then reheat it during the week and serve it with yogurt as a desert for my toddler, he loves it.

However I think I might start freezing it now.

Besides puddings, you can use it in a sauce for a rich meat like duck. I've done this before and it was really scrummy and nice change from cherries or orange.

I had this same problem a couple of days ago and made muffins.

I use this recipe for pretty much any glut of fruit www.bbcgoodfood.com/recipes/2431/bramley-and-blackberry-tray-cake

Mmmm (and it's v easy too but tastes delicious)

Wash and chop and freeze, don't need to defrost to cook with if chopped small! I threw in some finely chopped rhubarb to a standard banana bread and it was really nice, very moist. Was even nicer next time I did it with dark chocolate chips...rhubarb also makes lovely muffins, especially with Ginger.

Delia's Waitrose recipe for rhubarb creme brulee using greek yoghourt. Also try grilling the rhubarb sprinkled with brown sugar. Both yummy.

Sorry if this has already been suggested but it goes great with Mackeral or Trout.

Roast the rhubarb with a little sugar and a splash of water for about 25 minutes, then fry the fish and add the rhubarb, goes well with a little dressed salad, honestly works a treat.

Rhubarbtini

Jamie Oliver, Jamie at home, best thing to do with rhubarb ever, tastes fantastic.

Or roast rhubarb with orange juice or vanilla, strain off the juice and add one part vodka to one part rhubarb juice sweeten with sugar gomme or honey and shake over ice.
Use the rhubarb pulp to make rhubarb fool.

We have been living off rhubarb granita for the last few weeks - stew it with sugar and orange juice, then liquidise and freeze. 15 mins before serving, take it out of the freezer and then scrape into bowls with a fork.

Rhubarb milkshake is nice: just cook with some brown sugar, blend with vanilla ice cream and milk and a dash of vanilla extract or nutmeg. Yumm.

My sister made a fab rhubarb cheesecake last week. Even DP, who doesn't like rhubarb, liked it.

It was a regular cheesecake with a topping of stewed sweetened rhubarb. Yum. I want some more now, because I am thinking about it.

delia did a great rhubarb one this time last year for Waitrose, calorie loaded though (ahhhh had the excuse of being preggers).

Defo jam! My MIL makes a stunning Rhubarb and Vanilla jam that tastes like those rhubarb sweets!
