Breton Biscuits anyone know a how

I have a breton cookbook with a recipe in for breton biscuits if you want it, have not tried to make them though so not sure what it is like, bought the cookbook when got addicted to kouign-amann in brittany once years back but never got round to making that either....

Here we go....

breton biscuits
makes 25-30

250g plain flour
150g butter
25g caster sugar
salt
3 egg yolks
1 tblsp milk
icing sugar (optional)

Rub the flour and butter together to form small crumbs. Add the sugar and small pinch salt. Combine 2 egg yolks with milk add to the flour and work to a smooth paste. Allow to rest for 20 minutes

Roll out the paste to 3mm thick and cut into 5cm squares. Combine the remaining egg yolk with a teaspoon of water. Brush the biscuits with beaten egg yolk and score the surface with a sharp pronged fork.

Lay the biscuits on baking sheets and bake in a hot oven at 230C for about 8 mins

Transfer to a wire tray to cool and dust with icing sugar.
