If you're making your own, should you toast the bread first?

I don't normally, and I make loads & freeze them, but they can be a bit damp when first defrosted.

I don't toast. But I do leave the bread out to dry totally first - a few days should do it. I have a bowl that I put all my bread bits in (those bits that are just a bit too old to eat now or the crusts that nobody will eat) and when I've got enough for a batch I blitz them. They last much longer, get a much better texture whether you whizz them up fine or chunkier and you can use them straight from the freezer
