OK don't laugh. Basic grilled chicken recipe please

I've been veggie for 20 years so no idea what to do with a chicken but the DC do like a chicken dipper Blush so thought I could try them on healthier grilled chicken (I don't mind cooking meat just don't eat it). Have googled for recipes but they all look a bit complicated, DS1 is uber fussy so want to start with something v basic!

So if someone could Very Slowly talk me through it that would be great :)

If you buy the little chicken breast fillets - they'll be next to chicken breasts in the supermarket - and then tip them into beaten egg, then fresh breadcrumbs mixed with fresh grated Parmesan and black pepper, then grill them, turning once, for 20 mins on a medium heat, you won't even have to cut the chicken up ( used to be veggie myself ) and they are already dipper-shaped.

Then make some kind of healthy tomato ketchup and you're done!

Thanks but should have mentioned DS1 is allergic to egg, which seems to be in all homemade nugget recipes...

Hmm. I think you can miss out the egg and go straight for the breadcrumbs, especially if you add a wee bit of cheese which will melt and act as a glue.

Or or or - get a pot of Cajun spice and chuck the fillets in that, then grill? V tasty and tested to great success on little boys Wink

The good thing bout breadcrumbs or batter is that it keeps the chicken nice and moist whereas if you don't add fat, you need to be careful not to overcook.

You can mix a little flour and milk to double cream consistency and dip the chicken in that before rolling in the bread crumbs. Works quite well - I often do this if am out of eggs. Though I'd always shallow fry rather than grill, so not sure how crispy the end result would be.

I use the recipe I posted but oven bake and cut the chicken into chunks so more like nuggets than dippers. The cheese makes it go crispy.
