I've never wanted my lamb crispy on the outside Confused

Sorry, that wasn't very helpful!

I suppose if I did want it crispy on the outside I'd put it in for about 30 mins on high heat (220C) and then turn the oven down to 160C-ish and leave it for another 20 mins for rare. 30 mins if you want it just slightly pinkish.

Not many people like lamb crispy on the outside. I usually cook DH's lamb for 15 mins per pound plus 15 minutes at about 180 degrees - so that'd be about 45 mins to an hour for your piece.

Thank you!

To get it "crispy" on the outside I would put some oil and maybe a little flour on it before you start cooking it. Pop it in for 15 minutes at 200 then turn temp down to 170 for another 40 minutes or so I think.

salt, honey and fresh rosemary, after Ive pierced it all over and inserted slivers of garlic and rosemary leaves

same as oldtrout - rub salt and oil on first, then stab it, err sorry I mean pierce, and poke garlic and rosemary or (whatever herb you prefer the taste of) into the holes.
