My scones flopped :o(

I've just made scones for the first time since I was a teenager. Used Nigella's recipe (half quantities - my word that would have made a lot of scones!) and added 100g sugar - too much? I thought I rolled them thick enough but perhaps not. They have just flopped and spread everywhere - a right old mess Sad

Does anyone have a failsafe scone recipe, and shouldn't they be sweet? Confused These are to have for tea with clotted cream and jam.

That's quite a lot of sugar - what probably made them spread was being too wet. I find if I add too much liquid they do spread and flop.
Also, was your oven hot enough?

I use a quarter fat to sr flour ratio (eg 2oz butter 8oz flour) rub the fat into the flour, add a tsp of baking powder and about 25g sugar and then buttermilk - add the liquid very lowly and just use enough to combine.

Thank you IlsaLund! They were pretty wet - but I added milk per the recipe - maybe should be more cautious next time. Making them tomorrow for 'real' (yesterdays were practice) so thanks I will be more cautious this time oh and make sure the oven is hot enough.
