How do I refrigerate bread dough?

I'm making some olive bread (once I find a good recipe) for my mum, and I'd like it to be fresh tomorrow, but won't have time to make it tomorrow morning.

I was just wondering when it get's put in the fridge.

Make the dough, put it in a bowl and leave it with cling film on when you get to the "proving" stage.

So let it rise, knock it back and then fridge? That's what I thought, but I just needed to check because I've had bread disasters at the proving stage before
