Ideas for an easy but impressive, romantic meal for two

My DD17 and her bf are going to have a night in together at our house - the rest of us will be out.

I've said I'll help her plan what to cook - they can hopefully do it together.

Ideally, we thought some chicken breast chunk thing in a sauce to be served with rice/ linguine and a nice green salad.

Has anyone got any fab "maximum impact, minimum effort" ideas?

Chicken breast stuffed with cheese and wrapped with bacon? Dead simple, just make a cut in the breast and shove the cheese in, wrap a strip of bacon around it, and cook it in the oven. It's especially yummy with cherry tomatoes put in the oven at the last minute and wilted buttery spinach, along with some creamy mash or wedges.

What type of cheese do you use please? Soft (cream) cheese, or more like cheddar?

Thanks for this great suggestion - I would love this but she doesn't like bacon....

CN - It's best with the bags of grated cheese that are 'four cheese' or something, with cheddar, mozarella, etc. Or just cheddar :)

Cyril, I am astounded that someone can not like bacon! It is the food of the gods. You can wrap the chicken around some sausage meat and hold it together with cocktail sticks, instead of using bacon and cheese, but that's a bit fiddlier.
