i am over run with chillies(freshones from my plants)
Any suggestions on what to do with them?

chilli 'jam' (which is really a chutney). makes lovely presents for people.

Also (& obvious - sorry) dry them and they will keep and keep.

I just made a yummy curry with fresh chillies in it.

Also every year buy bottles of good olive oil and put a chilli, a clove of garlic, some peppercorns and a sprig of basil in. It flavours the oil and we use it throughout the year for salads etc.

You could pickle them too.

you can freeze them too - just chuck them in a freezer bag. When you need to use them just chop them while they are still frozen - helps to stop the chilli flavour getting on your fingers so much too.

anyone got a recipe for the chutney?
do you just pickle them like onions?

are they red or green? green chutney is nice, coriander, chillies, sugar, bit of water.

or red or green chillis, mint, lemon juicem ginger and salt.

or my fav - garlic chutney - 5/6 red chillis, cup grated Coconut, 10-12 cloves of Gralic, 1/2 table spoon of jeera, 2 tomatoes, 5tbsp oil and salt. Roast the spices, add tomato, cook for couple of mins, then blend with the coconut.
