Creme Brulee? The yolks will be fine if you cover them with water (assuming they're not broken that is) and in sealed pot for 3 days or so.

Or make a mayo, aioli, custard, zabaglioni, tiramisu.....some nice pâté sucrée for tart of some description.....

oooh. i didn't cover them with water - is it too late?
i will google zabaglioni!

Nope. In a sealed pot? or clingfilm? Cover now and enjoy zab if that's what you're making. Debloodylicious////

Carbonara sauce for pasta.
Fry pancetta with some crushed garlic.
Mix yolks with few big handfuls of grated parmesan.
Cook pasta and retain mugful of cooking water.
Take pasta off heat and stir in egg / cheese mixture and loosen with pasta water to desired consistency.
Stir in pancetta and serve.
Yum

Vanilla Sauce (I found the recipe somewhere but have not yet tried it:
95gm Sugar, 6 Egg Yolks, 450ml milk, 1 vanilla pod.
Combine half of sugar with egg yolks and whip lightly. Place milk in saucepan and sprinkle in remaining sugar (do not stir). Add vanilla pod and bring to the boil. Gradually whiskmilk into egg yolk mixture. Heat over boiling water, stirring all the time until sauce coats spoon.

Delicious, apparently, with pies and crumbles.
