Spanish Omelette (or similar) help please.......

OK so I've got to wait until tomorrow to do the shopping as DH is going to be working until 7pm (left at the crack of dawn )

I've got eggs, potatoes, onions, a bit of sliced ham and some celery - how do I make a nice dinner out of that lot........please

here's a recipe for the omelette. ham and celery on the side (soz, not v inspired, is it?).

You could fry them all up except the eggs. Put in a greased baking dish, quite a deep one. Whip the egs up and pour over. add salt pepper if you like. I like to add cheese too if youve got it. Bung in the oven on a lowish setting 150-175 maybe and leave it for about 20 mins. It will rise and brown, its a bit like pastryless quiche.

Or use the potatoes, celery and onions to make a soup (with veg stock cube or milk)

Then have egg on toast for lunch?
