Does anyone have and idea's what can stuff them with.

Have most thing in my cupboard.

The nicest thing I've found is soft cheese. Put the mushrooms open side down on the grill, brush them with a little oil, then grill them. Turn them over, fill with soft cheese (something like Boursin works well) and grill till the cheese bubbles. Mmmm

One classic recipe is parsley, a bit of garlic, some cheese and a few breadcrumbs with the stalks of the mushrooms if they're still on. Whizz in a blender with salt and pepper and a bit of soft butter and smoosh onto the mushrooms.

I like a mixture of finely chopped onion, red pepper, minced garlic, a little melted butter, bread crumbs & a strong cheese. Grill until cheese bubbles.

Yum. Remove stalks and chop finely. Finely dice some pancetta and fry till quite crisp, chuck in some finely chopped spring onions, clove of garlic and the mushroom stalks and some thyme and seasoning. Remove from heat and leave to cool a bit. Stir in some Philly and grated parmesan. Stuff said mushrooms, sprinkle over some more parmesan mixed with some breadcrumbs, oven at 200 fro about 25 minutes.

I like to stuff mush with a combination of cooked quinoa grains, avocado, and the stalks chopped and fried off with a bit of onion and garlic. Bit of mozarella over the top before popping into the oven to heat through and go runny!

I'll prob do the pancetta one then Dh can't moan he got no meat Grin.
